Sheet-Pan Chicken Thighs with Potatoes and Peppers

Skin that crackles, potatoes that catch at the edges, and one tray to wash.

There is a moment about thirty-five minutes in when the fat from the thighs has run down into the potatoes and the kitchen starts to smell like a Sunday. That is the whole appeal: ten minutes of chopping, then it leaves you alone. Do not stir it — the bits that catch on the tray are the reason to make it.

What you buy

  • 1.2 kg bone-in chicken thighs, skin on
  • 800 g potatoes, cut into 3 cm chunks
  • 2 red peppers, sliced thick
  • 1 yellow onion, cut into wedges
  • 1 lemon, halved
And from the cupboard
  • 3 tbsp olive oil
  • 2 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp salt
  • 0.5 tsp black pepper

Leftovers are the best sandwich of the week. Keep any paprika oil left in the tray.

What you do

  1. Heat the oven to 210°C fan. Toss the potatoes, peppers and onion with 2 tbsp of the oil, the paprika, oregano, salt and pepper, and spread them over a large tray in one layer.
  2. Rub the thighs with the last of the oil and a little more salt. Sit them skin-side up on top of the vegetables, so the fat renders down into them.
  3. Roast 40 minutes, until the skin is properly brown and the potatoes have caught at the edges. Do not stir.
  4. Squeeze the lemon over the tray straight out of the oven and leave it five minutes before serving.

Three things that decide it

  • Bone-in, skin-on. Boneless thighs cook in half the time and never crisp, and the skin is the recipe.
  • Potatoes UNDER the chicken, not beside it. Everything that renders out of the skin lands on them.
  • One layer, and a bigger tray than you think. Crowded vegetables steam; spaced ones roast.

If you have not got it

Smoked paprika
Sweet paprika plus a pinch of chilli. Not the same smoke, still good.
Chicken thighs
Drumsticks, same time. Breast dries out long before the potatoes are done.
Red peppers
Courgette or fennel, added halfway so they do not collapse.
Potatoes
New potatoes halved, or sweet potato, checked ten minutes earlier.

Ahead, and afterwards

The tray keeps three days covered in the fridge and reheats best in a hot oven for eight minutes; a microwave softens the skin. It does not freeze well, because the potatoes go grainy.

If it went wrong

The skin did not crisp
The tray was crowded, or the thighs went on wet. Pat them dry and give everything room.
The potatoes were still hard
Cut bigger than the chicken needed. Three centimetres, no more.
It tasted flat
Salt before roasting rather than after, and do not skip the lemon at the end.

Three ways to change it

Greek

Swap paprika for dried oregano, add olives and feta for the last five minutes.

Harissa

Two tablespoons of harissa in the oil, and chickpeas in with the potatoes.

Lemon and garlic

A whole head of garlic halved cut-side down, and two lemons instead of one.

Questions people ask

Can I make this with chicken breast?

You can, but roast it for 22 to 25 minutes and add it once the potatoes have had fifteen. Breast has no fat to render, and rendering fat is what this recipe runs on.

Do I need to parboil the potatoes?

No. Cut to 3 cm they roast through in the same forty minutes, and parboiling makes them fall apart under the weight of the thighs.

Can I prepare it in advance?

Chop and season the vegetables a day ahead, but only put the chicken on the tray as it goes into the oven. Salt sitting on raw skin draws water out and you lose the crackle.

Cooking it for a different number

Written for 4. For two, halve the 1.2 kg bone-in chicken thighs and leave the seasonings as they are — they scale badly by arithmetic and well by taste. For six or more, add half again rather than double, and use two trays or two pans instead of crowding one.

Or change the number once and let the shopping list follow. That is the one bit of this a person should never do by hand.
