How to meal plan on a budget without eating badly

The short answer

Plan around ingredients that appear in more than one meal, buy the cheap cut and cook it slowly rather than the expensive cut quickly, and write the list from the plan so you stop buying duplicates. Waste is usually a bigger line in a food budget than price, and it is the one you can fix without eating worse.

1The money is in what you throw away

Households throw away a meaningful share of the food they buy, and almost all of it was bought with good intentions: the second bunch of herbs, the vegetables for a meal that did not happen, the half tin nobody used.

That is money already spent, and unlike prices it is entirely under your control. Fixing it does not require eating anything cheaper.

2Overlap on purpose

Choose meals that share ingredients. One bunch of coriander across three dishes instead of one bunch used once and thrown away. One bag of potatoes across two.

This is the single highest-leverage habit in budget cooking and it costs nothing but a minute of thought while choosing. It also makes the shop smaller, which makes it faster.

3Buy the cheap cut and give it time

Chicken thighs cost a fraction of breast and are better in almost everything that is not a five-minute cook. Shoulder beats loin in anything braised. Dried pulses cost a tenth of tinned and need only planning, not skill.

The trade is time, not quality — often the opposite of quality, since the cheap cuts have the fat and the connective tissue that make food taste of something.

4Write the list from the plan, not from a mood

An unplanned shop is where budgets die. You buy what looks good, arrive home with nothing that combines, and improvise something that needs a second trip.

A list built from the meals you actually chose is shorter, contains no duplicates, and removes the aisle-standing decisions that cause overbuying. Add the quantities and it removes the last one — the two-kilos-or-six question you cannot answer while holding a basket.

5Three habits that beat any coupon

Shop once. Every extra trip is an opportunity to buy things you did not plan.

Check the two categories you always over-buy — usually tins and pasta — before leaving, not the whole cupboard, which nobody keeps up.

And cook the thing that is going off first, tonight. A plan that survives contact with the fridge is worth more than a plan that was cheaper on paper.
