Turkey Chili with Black Beans
Smoky, thick enough to stand a spoon in, and better on the second day.

Brown the turkey properly — leave it alone in the pan until it sticks, then scrape it up, because that is where the flavour comes from. Everything after is twenty minutes of simmering while you do something else. Half the beans go in early and collapse into the sauce; the other half go in at the end and stay whole.
What you buy
- 500 g ground turkey
- 1 yellow onion, diced
- 2 cans black beans, drained
- 1 can chopped tomatoes
- 1 bunch cilantro
- 2 tsp ground cumin
- 1 tsp smoked paprika
- 1 tbsp olive oil
- 1 tsp salt
Freezes perfectly in portions. It is the best thing to find in there in February.
What you do
- Soften the onion in the oil for five minutes. Add the turkey and brown it properly — let it sit still for a minute at a time rather than stirring constantly.
- Stir in the cumin and paprika, cook thirty seconds, then add the tomatoes and one can of the beans.
- Simmer twenty minutes. Add the second can of beans for the last five so they keep their shape.
- Coriander on top, off the heat.
Three things that decide it
- Brown the meat in a pan wide enough to spread it out. A crowded pan boils it grey.
- The spices go into the fat, not the liquid. Thirty seconds, and it is the whole difference.
- Half the beans early, half at the end. One lot thickens the sauce, the other stays whole.
If you have not got it
- Ground turkey
- Beef, pork, or brown lentils. Lentils want ten minutes longer and more liquid.
- Black beans
- Kidney or pinto. Not chickpeas, which never soften into it.
- Fresh coriander
- Flat parsley and lime. Not the same, but better than nothing if you taste soap.
Ahead, and afterwards
Genuinely better on day two. Four days in the fridge, three months in the freezer. Freeze it flat in bags and it thaws in twenty minutes under a cold tap.
If it went wrong
- Watery
- Simmer with the lid off for the last ten minutes. It thickens by reducing, not by cooking longer.
- Grey mince, no flavour
- The pan was too small or too cool. Brown it in two batches instead.
- Bitter
- The cumin burned. It wants thirty seconds in the fat, not two minutes.
Three ways to change it
Two chipotles in adobo, chopped, in with the tomatoes. Smokier and much hotter.
One diced sweet potato with the tomatoes, simmered five minutes longer.
No tomatoes, cannellini instead of black beans, chicken stock, finished with lime.
Questions people ask
Can I freeze turkey chili?
Yes, and it is one of the best things to freeze. Cool it fully, portion it flat in bags, three months. Thaw under cold water or overnight in the fridge and reheat gently so the beans keep their shape.
Why is my chili watery?
Almost always the lid. Simmer uncovered for the last ten minutes: the liquid has to leave for the sauce to thicken.
Is turkey chili healthier than beef?
It is leaner, which is a different claim from healthier. Farro tracks no calories and no macros, and this page will not pretend otherwise.
Cooking it for a different number
Written for 4. For two, halve the 500 g ground turkey and leave the seasonings as they are — they scale badly by arithmetic and well by taste. For six or more, add half again rather than double, and use two trays or two pans instead of crowding one.
Or change the number once and let the shopping list follow. That is the one bit of this a person should never do by hand.
